Simplified 1x shifting is typically only available on high-end models. Components are often too large for kids – handlebars are too wide, brake levers hard to reach, etc. Wheels on an adult bike come in 26″, 27.5″, 700c (hybrid), and 29″ sizes. As long as the frame fits, kids can jump from a 24″ to a 27.5″ wheel.
For example, while not a perfect comparison using a torus to get an idea, a 26" tire that is just .3" wider than a 27.5" tire will be significantly bigger with more volume. 27.5" with a major radius of 14 and minor of 2.25 has a volume of 1399. 26" with a major radius of 13.5 and minor of 2.4 has a volume of 1535.

I wouldn't say I want no part of 27.5/29, but I am perfectly happy with 26" wheels. Granted, my main mountain bike is far from stock at this point, but despite its age I have zero complaints about it, and it works far better than I deserve on all the trails I ride. I like the agility and ease of acceleration of its lightweight 26" wheels.

I’ve tried to explain the subtle differences that exist between 26″ and 27.5″ fat bike wheels. There’s virtually no quantifiable difference between 26×4 and 27.5 x 4. The differences mainly exist when you look at achieving maximum flotation and are slightly exacerbated by the limited availability of 27.5 tires. (no Bud & Lou).
Are there any enduro level (150mm+ travel) full suspension frames out there that are advertised as supporting both standard 27.5(not +) and 29 wheels…
IMO I'd go 29+ Simply because, as others have stated, there isn't as dramatic of a difference between 26 4.0 and 27.5 3.8 The extra roll-over is what I'd be looking forward to. I run 29 X 3.0 on a fat bike and it's excellent for what it's intended for.
